What To Make This Weekend Without Cooking
The dining table is covered with mounds of clothing, and my bed is a mess of clean towels and sheets in desperate need of folding. And yet, here I am, writing a post. If procrastination were a major, I’d hold a doctorate-level degree.
The morning began with some baking, a little something to tide us over as we pack for Isabella’s departure tomorrow. She’ll be spending the next three weeks at a writing workshop. It’s the longest she’ll be away since I gave birth.
I realize many of you have children who attend sleepaway camp, and while it’s long been a dream for my girls to do this, I never really thought it would become a reality. We’re a rather close-knit group, and they’ve never wanted to do it. Growing up, sleepaway camp was not something anyone I knew ever did. Italian-Americans can be odd that way, at least the families I grew up around.
It was common to send your kids to relatives for the summer, perhaps even as far away as across the ocean, but a strange place with people you don’t know? Um, no. That would’ve never happened. This is good preparation for college in a few years, but gosh, I’m going to miss her. She’s the Rory to my Lorelai.
So, while I turn my attention back to packing, I’ll leave you with a list of some No-Cook favorite recipes should you have an itch to make something without adding more heat to an already hot and humid day.
p.s that Arugula, Peach & Fresh Corn Salad is one my ALL-TIME SUMMER FAVORITES!
