Weekly Meal Plan #3
I’m not known for over scheduling my life. In fact, I’m quite the opposite, a firm believer in “let’s wake up, and see where the day takes us”. This week was the polar opposite. I dropped Isabella off in Brooklyn at a best friend’s for the week, then made my way to New Jersey for a quickie visit to see another dear friend at the beach. Virginia and I went home for all of 20 hours, and then were off to Connecticut for a sneak peek at a friend’s soon to be opened Inn.
On the way home from 11 Cornwald, we made a side trip to Great Barrington. I had an ice cream craving, and espresso ice cream at 11:00am isn’t so bad, right? I mean it’s got milk and coffee. It’s like a frozen latte for breakfast.
Friday found me driving back to Brooklyn to pick up Isabella. Needless to say, come Saturday, I decided if I never drive again, I’d be a happy woman. Of course, this isn’t realistic living in a rural area, but a girl can dream.
This week, I’m only home for two days, then off to the city for work meetings and events, so it’ll be a light cooking week. I planted kale for the the first time this year, and what began as a weak start, blossomed into a party in the garden. That means Crispy Baked Kale Chips are in our future.
I’ve also been meaning to try this Seed Pâté from 101 Cookbooks ever since the recipe popped into my inbox a few weeks ago. The sunflower seeds and pumpkin seeds have been sitting on my counter. They need an overnight soak for this recipe, so some forethought is required, and maybe a reminder on my phone to set them up to soak before I go to sleep.
Tomatoes are full throttle at the farmstand. There’s only one time of year to enjoy this Italian Rice Salad as far as I’m concerned. Lastly, there are cucumbers piling up that I’ve been meaning to pickle, so these Quick Pickles are on my To Make list before I leave on Wednesday morning. p.s. It seems this was a peak week for making peach jam. This recipe was off the charts this weekend, and knocked my waffle recipe aside for the most viewed recipe of the weekend.
